Quick Weeknight Dinner

Crispy Gnocchi with Mushrooms

A simple one-pan recipe combining golden gnocchi with sautéed mushrooms, butter, and Parmesan cheese, ready in under 30 minutes

Gnocchi

Ingredients

500 grams store-bought gnocchi

250-300 grams cremini mushrooms, sliced

1 medium onion, thinly sliced

2 garlic cloves, minced

2 tablespoons olive oil

Ready for more?

25 grams butter

50-70 grams grated Parmesan cheese

Salt to taste

Black pepper to taste

Handful of chopped fresh parsley

3-4 tablespoons cooking cream (optional)

Preparation

  1. Heat a large, wide skillet with the olive oil over medium-high heat. Add the gnocchi straight from the package and pan-fry for 8-10 minutes, stirring occasionally, until golden and crispy on the outside. Transfer to a plate and set aside.
  2. In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened.
  3. Add the mushrooms and cook over high heat for about 5 minutes, until they brown and their liquid evaporates.
  4. Stir in the butter and minced garlic, cooking for about 30 seconds. Return the gnocchi to the pan, season with salt and black pepper, and add about half the Parmesan.
  5. Toss everything together and cook for another 1-2 minutes.
  6. For a creamier version, add the cooking cream at this stage and stir until it coats the gnocchi. Remove from heat, sprinkle with the remaining Parmesan and fresh parsley, and serve immediately.
