25 grams butter
50-70 grams grated Parmesan cheese
Salt to taste
Black pepper to taste
Handful of chopped fresh parsley
3-4 tablespoons cooking cream (optional)
Preparation
- Heat a large, wide skillet with the olive oil over medium-high heat. Add the gnocchi straight from the package and pan-fry for 8-10 minutes, stirring occasionally, until golden and crispy on the outside. Transfer to a plate and set aside.
- In the same skillet, add the sliced onion and sauté for 2-3 minutes until softened.
- Add the mushrooms and cook over high heat for about 5 minutes, until they brown and their liquid evaporates.
- Stir in the butter and minced garlic, cooking for about 30 seconds. Return the gnocchi to the pan, season with salt and black pepper, and add about half the Parmesan.
- Toss everything together and cook for another 1-2 minutes.
- For a creamier version, add the cooking cream at this stage and stir until it coats the gnocchi. Remove from heat, sprinkle with the remaining Parmesan and fresh parsley, and serve immediately.
