Ingredients
The recipe works with either a standard loaf pan or a 22-centimeter (roughly 9-inch) round pan, and calls for pantry staples most home bakers keep on hand:
For the cake:
3 large eggs
½ cup (100 grams) sugar
½ cup (160 grams) honey
½ cup (120 milliliters) canola oil
½ cup (120 milliliters) hot espresso or strong filtered black coffee
¼ teaspoon ground cardamom or cinnamon
1½ cups (210 grams) all-purpose flour
1 packet (10 grams) baking powder
½ teaspoon baking soda
For the almond topping:
½ cup sliced blanched almonds and 1 tablespoon honey.
While honey cakes are deeply rooted in Jewish holiday tradition, this recipe introduces an interesting variation through the coffee and caramelized almonds. The result looks sophisticated but requires minimal effort to prepare.
Preparation
- Preheat the oven to 165 degrees Celsius (approximately 330 degrees Fahrenheit) and thoroughly grease your baking pan.
- In a large bowl, whisk together the eggs, sugar, honey, and oil until well combined.
- Gradually add the hot coffee while whisking quickly to prevent the eggs from cooking.
- Sift the flour, baking powder, baking soda, and cardamom or cinnamon into the bowl. Whisk just until the mixture becomes smooth and relatively liquid—avoid overmixing.
- Pour the batter into the prepared pan. In a small bowl, toss the sliced almonds with the tablespoon of honey, then distribute this mixture evenly over the batter.
- Bake for approximately 35 to 40 minutes, until the almonds turn golden brown and a toothpick inserted in the center emerges dry or with minimal crumbs.
The cake keeps well for several days, and its flavor actually improves over time—ideal for preparing ahead of Rosh Hashanah.
NOTE: If you keep the custom of avoiding nuts on Rosh Hashanah, simply leave them out. The cake works without them.
