JUST IN TIME FOR YOM TOV! Here's a recipe for the best pareve noodle kugel you have ever tasted

This delicious kugel is the perfect sweet accompaniment for your Yom Tov table.

In my South African childhood, our maid Phyllis, who was an exceptional cook and baker, used to make this for Shabbos and Yom Tov. It was always a crowd pleaser.

Phyliss' Famous Noodle Kugel

Ingredients:

400 grams Osem (wide or medium) lokshen noodles (or wide noodles)

400 grams canned pineapples (drained and chopped)

1 cup sugar

1-1.5 tsp cinnamon

8 beaten eggs

3/4 cup veg oil

1/4 lemon squeezed

1/2 cup raisins

Method:

1. Grease a loaf pan (or a rectangular pan) with oil or margarine (or line with baking paper).

2. Boil noodles in a large pot and drain well. 

3. Add oil and sugar, and mix well.

4. Add the rest of the ingredients.

5. Sprinkle the top with cinnamon.

6. Bake at 180 degrees for 1 hour.

Notes:

If your family doesn't enjoy raisins, leave them out.

You can replace the tinned pineapples with 6 peeled and chopped apples for a tasty Rosh Hashanah twist.
