Looking for something light and satisfying to serve for supper in the Sukkah? These individual focaccias are exactly what you need: soft, golden dough wrapped around melting cheese and cherry tomatoes, finished with a drizzle of olive oil. They are simple to prepare, fun to serve, and ideal for hosting during Chol HaMoed.

Individual Focaccia Stuffed with Cheese and Cherry Tomatoes

Ingredients for 6 focaccias

For the dough:

500 grams flour

Ready for more?

1 tablespoon dry yeast

1 tablespoon sugar

1 teaspoon salt

3 tablespoons olive oil

Approximately 300 ml lukewarm water

For the filling:

200 grams shredded mozzarella

100 grams crumbled Bulgarian cheese

10–12 cherry tomatoes, halved

A little oregano or basil

For topping:

Olive oil

A little coarse salt

Oregano or rosemary, to taste

Preparation

In a large bowl, combine the flour, yeast and sugar. Gradually add the water and olive oil and begin kneading. Add the salt and continue kneading for several minutes until you have a soft, elastic dough. Cover and let rise for about an hour, until the dough has doubled in volume.

Divide the dough into six equal balls. Flatten each ball into a circle and place mozzarella, Bulgarian cheese, cherry tomato halves and a little oregano or basil in the centre.

Fold the edges of the dough over the filling and seal well. Turn so the seam is facing down and gently flatten into the shape of an individual focaccia.

Arrange on a baking tray lined with parchment paper, make small dimples in the dough with your fingers and drizzle olive oil over the top. Sprinkle with a little coarse salt and herbs.

Bake in an oven preheated to 220°C for about 15–20 minutes, until the focaccias are puffed and golden.

Remove from the oven and serve warm, while the dough is still soft and the cheese inside is melted. Alongside a large salad and a few dips, you have a simple, enjoyable supper that is just right for sitting in the Sukkah.
