Ingredients:
8 round rice paper sheets
About 1 cup thick vanilla yogurt or sweetened Greek yogurt
1 ripe mango cut into small cubes, or 8-10 strawberries sliced
Instructions:
- Prepare a wide bowl filled with warm water and place it within easy reach.
- Dip one rice paper sheet into the water for just a few seconds. There's no need to wait until it becomes completely soft—it will continue softening after you remove it from the water.
- Place the dampened rice paper on a clean work surface.
- In the center of the sheet, arrange a few pieces of mango or strawberry slices, then top with a heaping tablespoon of yogurt. Be careful not to overfill, as too much filling can cause the sheet to tear when folding.
- Fold both sides inward, then fold up the bottom portion and gently roll forward like a small, sealed spring roll.
- Repeat with the remaining rice paper sheets, arranging the finished rolls on a plate or tray so they don't stick together.
- Transfer to the freezer for about one hour.
- Serve when the filling is very cold and nearly frozen but still creamy. If left in the freezer for several hours and completely frozen, allow them to sit at room temperature for a few minutes before eating.
Key tip: Don't oversoak the rice paper. An overly wet and soft sheet becomes sticky and difficult to roll. A quick dip is sufficient.
To turn this into a fun activity during school breaks, set out several small bowls with different fruits and let each child choose their own filling, roll their own dessert, and place it in the freezer. An hour later, they'll have a treat they made themselves.
You can also lightly dust the finished rolls with cornstarch before freezing. This isn't essential, but it reduces stickiness and improves texture.
