This vibrant salad brings together several of the symbolic foods traditionally eaten on Rosh Hashanah, the Jewish New Year. Combining crisp apple slices, jewel-like pomegranate seeds, toasted nuts and a honey-sweetened dressing, it offers a light, pareve (non-dairy) option that complements heavier holiday dishes while incorporating ingredients associated with wishes for a sweet year ahead.
Ingredients
One bag lettuce leaves or mixed greens
One green apple, thinly sliced
One red apple, thinly sliced
Half cup pomegranate seeds
Half cup toasted walnuts or pecans
Quarter red onion, thinly sliced
For the dressing
3 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoon honey
1 teaspoon mustard
Pinch of salt
Black pepper to taste
Preparation
- Arrange the greens, apple slices, pomegranate seeds and red onion in a large serving bowl.
- Combine all dressing ingredients in a small jar and shake vigorously until well mixed.
- Pour the dressing over the salad just before serving and toss gently to coat.
Scatter the toasted nuts over the top and serve immediately.
