Ingredients
- 1 cup smooth peanut butter (about 250 grams)
- 3/4 cup sugar (about 150 grams)
- 1 large egg
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a single bowl, combine the peanut butter, sugar, and egg.
- Mix until you have a smooth, thick batter.
- Roll the dough into small balls with your hands and place them on the prepared baking sheet, leaving space between each one. Gently flatten each ball with a fork. For the classic crosshatch pattern associated with peanut butter cookies, press once more in the opposite direction.
- Bake for 9 to 12 minutes, until the edges are set and take on a light golden color. Don't wait for the cookies to feel firm—they'll still be very soft when they come out of the oven and will firm up as they cool.
- Let the cookies cool on the baking sheet for a few minutes before transferring them to a plate.
The most dangerous part of this recipe? From the moment they start cooling, it's nearly impossible to stop at just one.
Enjoy!
