Simple Ingredients: Everything You Need for 4 Servings

The secret to a delicious dish lies in the right combination of quality ingredients. You don't need much, but what you use should be good:

250 grams pasta; spaghetti, penne, or fusilli, whatever type you prefer

4 tablespoons quality olive oil

3-4 garlic cloves, thinly sliced

One can crushed tomatoes (400 grams)

Salt and freshly ground black pepper to taste

1 teaspoon dried oregano or basil

For serving: grated Parmesan or Bulgarian cheese (optional)

The beauty of this recipe lies in its simplicity, no need for special or expensive ingredients. The crushed tomatoes provide the base for a rich sauce, the fried garlic adds depth of flavor, and quality olive oil brings everything together. If you have fresh basil at home, that can be a wonderful upgrade, but even without it, the dish will turn out excellent.

Preparation Method: Simple and Fast

The first step is to bring a large pot of salted water to a boil and cook the pasta according to the manufacturer's instructions. Don't forget to add salt to the water, that's what gives the pasta its basic flavor. While the pasta cooks, you can start preparing the sauce.

In a wide skillet, heat the olive oil over medium heat. When the oil is hot, add the sliced garlic and fry for just one minute. Be careful, garlic burns very quickly, and if it burns it will turn bitter. The goal is to achieve a delicate golden color and an aromatic scent that fills the kitchen.

Once the garlic is ready, add the crushed tomatoes directly to the skillet. Here comes the important trick: before the sauce starts cooking, set aside half a cup of the pasta cooking water. The cooking water contains starch that helps the sauce cling to the pasta and gives it a creamy texture.

Season the sauce with salt, black pepper, and oregano or basil, and add the reserved cooking water. Bring to a boil, lower the heat, and cook for about 10 minutes. During this time, the sauce concentrates and the flavors blend beautifully.

When the pasta is ready, drain it and transfer it straight into the skillet with the sauce. Don't rinse the pasta! The starch remaining on it helps the sauce adhere. Toss the pasta with the sauce for a minute or two over low heat, so every strand of pasta gets coated in the rich sauce.

Tips for Guaranteed Success

As with other quick pasta recipes, here too there are a few small tricks that make all the difference. First, don't skimp on the olive oil, it's the foundation of a tasty sauce. Second, if you like spicy sauce, you can add thinly sliced chili pepper along with the garlic.

If you have time, it's worth buying quality crushed tomatoes, the difference in taste is noticeable. Fresh garlic is also preferable to dried garlic or garlic powder. And for those who want to upgrade the dish, you can add a handful of grated Parmesan at the end and some torn fresh basil.

This dish is also suitable for advance preparation, the sauce can be made earlier in the day and stored in the refrigerator, and in the evening just cook fresh pasta and reheat the sauce. That way you can serve a delicious home-cooked meal in just minutes, even on the busiest evenings.
