Brownies With a Secret Pistachio Layer

Rich chocolate brownies meet golden, crispy kadaif and pistachio cream in a dessert that looks as stunning as it tastes. One bite and you'll understand why this combination has become a sensation.

Chocolate, pistachio and kadaif: the brownies you simply can't resist

Some desserts command attention the moment they land on the table. These brownies are exactly that kind of showstopper, fudgy chocolate base, a surprise layer of golden kadaif tangled with pistachio cream, and a glossy chocolate ganache finish that catches the light.

The magic is in the contrast: soft, rich brownie against the crunch of toasted kadaif, all bound together with sweet pistachio cream. It's the kind of dessert that makes people ask for the recipe before they've finished their first square.

For the Brownies

150g dark chocolate

100ml oil

150g white sugar

50g brown sugar

2 large eggs

1 tsp vanilla extract

80g flour

25g cocoa powder

1/4 tsp salt

For the Pistachio Kadaif Layer

200g kadaif (shredded phyllo), thawed

2 tbsp oil

300g sweet pistachio cream

2 tbsp raw tahini

For the Chocolate Layer

150g dark chocolate

100ml non-dairy cream

For Garnish

1-2 tbsp pistachio cream

Chopped pistachios

Instructions

  1. Preheat your oven to 175°C (350°F) and line your pan with parchment paper.
  2. Melt the dark chocolate with the oil in short microwave bursts, stirring between each heating, until you have a smooth mixture.
  3. In a separate bowl, whisk the eggs with both sugars and the vanilla. Pour in the melted chocolate and stir to combine.
  4. Add the flour, cocoa and salt, mixing only until no dry flour remains visible. Don't overmix - that's the key to keeping these brownies fudgy.
  5. Transfer the batter to your prepared pan and smooth the top. Bake for 25-30 minutes, until the edges are set but the center still looks slightly soft and a toothpick comes out with moist crumbs. Let cool completely in the pan.
  6. While the brownies cool, prepare the kadaif: cut the strands slightly shorter so they're easier to work with.
  7. Heat the oil in a wide skillet, add the kadaif and fry over medium heat, stirring frequently, for about 10-15 minutes until golden and thoroughly crisp. Stay by the pan - toward the end it browns quickly.
  8. Remove from heat and let cool for a few minutes. Add the pistachio cream and tahini, mixing until every strand is coated.
  9. Spread the pistachio-kadaif mixture in an even layer over the cooled brownies, pressing down gently to help it adhere.
  10. Make the ganache: heat the non-dairy cream until very hot but not boiling. Pour over the chocolate, wait two minutes, then stir until you have a smooth, glossy cream.
  11. Pour the ganache over the pistachio layer and spread into a thin, even coating. Drizzle a bit of pistachio cream on top and scatter with chopped pistachios.
  12. Transfer to the refrigerator for 30-60 minutes, just until the layers firm up. Remove, cut into squares with a sharp knife, and serve.

The crucial tip: don't skimp on toasting the kadaif fully. The entire appeal of this dessert lies in the contrast between the soft brownies, the cream, and the crispy kadaif.
