Tuna and Potato Patties
Ingredients:
- 3 medium potatoes
- 2 cans tuna, well drained
- 1 egg
- Half an onion, finely chopped
- 3 tablespoons breadcrumbs
- Handful of chopped parsley
- Half teaspoon sweet paprika
- Quarter teaspoon cumin
- Salt and black pepper to taste
- 2 tablespoons olive oil
Preparation:
- Boil the potatoes in water until tender.
- Drain and mash into a smooth puree.
- Add the drained tuna, egg, onion, breadcrumbs, parsley, and spices, mixing thoroughly until you have an even mixture.
- Shape the mixture into patties and arrange them on a baking sheet lined with parchment paper.
- Brush or drizzle a bit of olive oil over each patty.
- Bake in an oven preheated to 200°C (400°F) for approximately 25 minutes.
- Flip the patties halfway through and continue baking until they're golden and crispy on both sides.
