For the pasta: One 500-gram package of short pasta—fusilli, penne, or shells work well. Choose shapes with ridges or hollows that catch the dressing.

For vegetables and additions:

One cup halved cherry tomatoes, two cucumbers diced small, one yellow or red bell pepper diced, half a cup sliced black or green olives, half a small red onion finely chopped (optional), 150 grams crumbled Bulgarian or feta cheese, and a handful of fresh basil leaves.

For the summer dressing:

1/4 cup quality olive oil

2-3 tablespoons fresh lemon juice or white wine vinegar

1 teaspoon dried oregano

1 crushed garlic clove (optional)

1 teaspoon honey or date syrup to balance acidity

salt and black pepper to taste.

Quick Preparation Steps

Cook the pasta in a pot of boiling salted water according to package directions until al dente.

It's important not to overcook—the pasta should remain slightly firm since it will continue softening even after cooking.

Drain and rinse under cold water to stop the cooking process and cool the pasta completely.
