These cottage cheese rolls deliver fresh-baked breakfast bread without the wait. The recipe skips yeast entirely, meaning there's no need to wait for dough to rise. Instead, a few basic ingredients come together quickly to produce soft, golden rolls that emerge from the oven in less than half an hour.
For 8-10 rolls:
Ingredients:
250 grams of cottage cheese
2 eggs
2 cups of flour
2 teaspoons of baking powder
2 tablespoons of olive oil
1/2 teaspoon of salt.
Beaten egg for brushing and sesame seeds or poppy seeds for topping.
Method:
- Preheat your oven to 180 degrees Celsius (350°F) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the cottage cheese, eggs, and olive oil. Add the flour, baking powder, and salt, stirring just until a soft, slightly sticky dough forms.
- With lightly moistened hands, shape the dough into 8-10 balls. Arrange them on the prepared baking sheet with space between each roll. Brush the tops with beaten egg and sprinkle with sesame or nigella seeds.
- Bake for 20-25 minutes, until the rolls are puffed and golden brown. This timing is consistent with other no-yeast cottage cheese roll recipes.
- Remove from the oven and let cool briefly before serving warm.
- The rolls pair well with cheese, vegetables, avocado, or eggs—or split them open and fill with your preferred ingredients.
