This recipe yields approximately five English-style loaf cakes.
Ingredients:
- 10 eggs
- 2 cups sugar
- 1 cup honey
- 1 cup oil
- 1 cup boiling water
- 1 teaspoon baking soda
- 2 tablespoons instant coffee
- 1 tablespoon liqueur
- 1 teaspoon cinnamon
- 1/2 cup sweet red wine
- 2 packets baking powder
- 4 cups flour
Instructions:
1. Separate the eggs. Transfer whites to a mixer bowl and beat with one cup of sugar until stiff, airy peaks form.
2. In a separate bowl, beat the yolks with the remaining cup of sugar. Gradually add the oil while beating, then incorporate the honey.
3. Dissolve the instant coffee in the cup of boiling water. Add the baking soda to this mixture and immediately pour into the yolk bowl—work quickly, as the mixture will foam and may overflow if delayed.
4. Add the liqueur, cinnamon, wine and flour to the yolk mixture, stirring until a smooth batter forms.
5. Gradually fold the yolk batter into the beaten egg whites, mixing gently to preserve as much airiness as possible.
6. Add the baking powder and fold in gently at low speed just until incorporated.
7. Divide the batter among five loaf pans lined with parchment paper.
8. Bake in an oven preheated to 180°C (350°F) for approximately 40 minutes, until the cakes develop a golden-brown color and appear fully baked. Depending on your oven, you may need to rotate the pans during baking for even results.
Allow to cool slightly before slicing and serving.
