Thursday lunch presents a familiar dilemma: you want something nourishing and flavorful, but don't have the energy or time for elaborate cooking. The solution comes from Asian cuisine—a vegetable and noodle stir-fry topped with exceptionally crispy tofu cubes.
Beyond being colorful and nutritionally balanced, this dish offers a practical way to use up leftover vegetables from the week. The entire meal comes together in about 20 minutes.
The key to transforming tofu from bland to delicious lies in achieving the right texture. Many people who claim to dislike tofu have only experienced it soft and spongy. The secret to success involves three steps: thoroughly drying the tofu with paper towels, coating it lightly with cornstarch before frying, and cooking it briefly in a hot pan. The cornstarch creates a golden, crispy shell that absorbs the sauce without becoming soggy.

Ingredients:
For the base and tofu:
1 package firm tofu (300g), well-dried and cubed
1 tablespoon cornstarch (or potato starch)
150g noodles (rice noodles, egg noodles, or Asian wheat noodles)
1-2 tablespoons oil for frying.
For the stir-fry:
1 carrot, cut into thin strips
1 red bell pepper, sliced into strips
half a broccoli head (small florets) or sliced zucchini
2 garlic cloves, minced; half teaspoon grated ginger (optional).
For the sauce (mix in a small bowl):
3 tablespoons quality soy sauce
1 tablespoon date syrup or pure maple syrup
1 tablespoon sweet chili sauce (or a bit of sriracha for spice lovers)
1 teaspoon sesame oil
2-3 tablespoons water.
Instructions:
Prepare the noodles: Cook or soak the noodles according to package directions. Drain and rinse with cold water to stop cooking and prevent sticking.
Make the tofu crispy: In a bowl, gently toss the dried tofu cubes with cornstarch until evenly coated with a thin layer. Heat oil in a wide skillet or wok, and fry the tofu for 6-8 minutes, stirring occasionally, until the cubes are golden and crispy. Transfer to a plate.
Stir-fry the vegetables: In the same pan, add a bit more oil along with the garlic and ginger. Fry for 30 seconds (watch carefully to prevent burning), then add the carrot strips, bell pepper, and broccoli. Stir-fry over high heat for 3-4 minutes. The goal is to keep the vegetables crisp and vibrant.
Combine everything: Return the crispy tofu to the pan, add the cooked noodles, and pour the prepared sauce over everything.
Final touch: Stir-fry everything together over high heat for one to two minutes, until the sauce thickens slightly and coats all the ingredients evenly.
