When you need a satisfying meal without spending much time in the kitchen, this skillet tortilla delivers. Filled with seasoned chicken strips and colorful sautéed vegetables, then crisped in a pan, it's a complete dish that works equally well for lunch or dinner.
Ingredients:
6 tortillas
500 grams (about 1 pound) chicken breast, sliced into strips
1 onion, sliced into strips
1 red bell pepper, sliced into strips
1 yellow bell pepper, sliced into strips
1 carrot, cut into thin strips
2 tablespoons olive oil
1 teaspoon sweet paprika; 1/2 teaspoon cumin; 1/2 teaspoon garlic powder;
salt and black pepper to taste
For the sauce:
3 tablespoons mayonnaise
1 tablespoon sweet chili sauce
1 teaspoon lemon juice
small amount of crushed garlic
Preparation:
- Heat the oil in a large skillet and cook the chicken strips until they begin to turn golden.
- Add the paprika, cumin, garlic powder, salt and pepper, stirring to coat evenly.
- Add the onion, bell peppers and carrot to the pan and sauté for several more minutes, until the vegetables soften slightly while retaining some crispness.
- In a small bowl, combine all sauce ingredients and mix well.
- Spread a small amount of sauce in the center of each tortilla, add a portion of the chicken and vegetable mixture, and fold securely.
- Return the filled tortillas to a dry skillet and sear for one to two minutes per side, until golden and crispy.
