Looking for a satisfying weeknight meal that comes together quickly without much fuss? This chicken and vegetable stir-fry with noodles delivers exactly that. Tender strips of chicken breast combine with crisp vegetables and soft noodles, all coated in a sweet-savory Asian-inspired sauce.
Ingredients
500 grams chicken breast, sliced into strips
250 grams noodles
1 red bell pepper, sliced into strips
1 carrot, julienned
1 zucchini, sliced into strips
1 purple onion, sliced
2 garlic cloves, minced
2 tablespoons oil
2 scallions
Sesame seeds for garnish (optional)
For the sauce
4 tablespoons soy sauce
2 tablespoons honey
1 tablespoon sweet chili sauce
1 teaspoon sesame oil
1 teaspoon cornstarch
3 tablespoons water
Preparation
- Cook the noodles according to package directions, drain, and set aside.
- In a small bowl, whisk together all sauce ingredients until smooth and well combined.
- Heat oil in a large skillet or wok over high heat. Add the chicken strips and stir-fry until golden and cooked through. Transfer to a plate.
- In the same pan, stir-fry the onion, carrot, bell pepper, and zucchini for 4-5 minutes until slightly softened but still crisp.
- Add the minced garlic and cook for another 30 seconds.
- Return the chicken to the pan, add the cooked noodles, and pour the sauce over everything.
- Toss and stir-fry for 2-3 minutes until the sauce evenly coats the chicken and noodles.
- Top with sliced scallions and sesame seeds before serving.
