Recipe: Air Fryer Latkes That Will Leave the Oil to the Chanukia
Looking to cut back a bit and have a slightly healthier holiday? These air fryer latkes drop the oil without losing a bit of taste or crunch.

Preheat the air fryer: Set the air fryer to 400°F.
Prepare the mixture: Grate the potatoes and onion on the large holes of a box grater. Transfer to a kitchen towel and squeeze out as much moisture as possible. Place the mixture in a large bowl. Add the eggs, panko crumbs, salt, and pepper. Stir until well combined.
Cook the latkes: Grease the air fryer racks or basket with cooking spray. Drop the mixture in 2 to 3 tablespoon portions into the air fryer, flattening each into a patty. Do not crowd the air fryer. Arrange latkes in a single layer and cook in batches. Spray the tops with cooking spray. Cook for 8 minutes. Flip, spray again, and cook for 5 more minutes or until golden and crisp.
Serve: Garnish with chopped chives. Serve with sour cream, applesauce, etc.
