Quick One-Pot Pasta with Cherry Tomatoes

Busy evening, hungry family, and the thought of a sink full of dishes? This one-pot pasta method offers an elegant solution. By cooking the pasta directly in water alongside cherry tomatoes, garlic, and fresh basil, you can prepare a satisfying Italian-style meal in about 15 minutes using just a single pot.

Ingredients:

For two servings:

- 250g pasta (spaghetti or penne)

- 2 cups cherry tomatoes, halved

- 4 garlic cloves, thinly sliced

- 3 tbsp quality olive oil

- Generous handful fresh basil leaves

- 3.5 cups boiling water (or vegetable stock for deeper flavor)

- 1/2 tsp salt

- Freshly ground black pepper

- Grated Parmesan or similar hard cheese, to serve

Note: If fresh basil isn't available, dried oregano or Italian herb blends can substitute.

Method:

To prepare, start with a wide, shallow pot, the broader the pot, the more evenly the pasta will cook.

  1. Place the uncooked pasta, halved cherry tomatoes, sliced garlic, olive oil, salt, and pepper in the pot.
  2. Pour the boiling water over everything and bring to a boil over high heat.
  3. Once boiling, cover the pot and reduce to medium-high heat. Cook for approximately 9-10 minutes, stirring frequently, this is crucial for success. Regular stirring prevents the pasta from sticking to the bottom and helps release the starch that creates the sauce's creamy texture.
  4. When the sauce has thickened and the pasta reaches al dente texture (tender but still with a slight bite), remove the pot from heat.
  5. Add the fresh basil leaves, then stir gently and sprinkle grated cheese over the top to taste.

The cheese will melt slightly from the pasta's residual heat, creating an additional flavor layer. You can serve directly from the pot to individual plates, or transfer to a serving bowl.

This dish works well for quick weeknight dinners, unexpected guests, or simply evenings when kitchen time needs to be minimal.

Several tips ensure success: Use a wide, shallow pot rather than a deep one for even cooking. Don't skip the frequent stirring, it prevents sticking and creates the creamy sauce. If the sauce appears too dry, add a bit of hot water. If it's too liquid, cook uncovered for another minute or two.

Variations are welcome: sautéed mushrooms add richness, black olives provide Mediterranean flair, and those who enjoy heat can add chopped chili pepper along with the garlic.
