When you're craving something sweet but want something lighter than classic chocolate cookies, these lemon cookies are exactly what you need. They're soft on the inside with a slight crispness on the outside, and get their wonderful fresh flavor from lemon juice and zest.
Ingredients
- 100 grams softened butter
- Half cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- Zest of one lemon
- 2 tablespoons fresh lemon juice
- 1½ cups flour
- 1 teaspoon baking powder
- Pinch of salt
- Powdered sugar for coating
Preparation
- Place the butter and sugar in a bowl and mix until you get a light, creamy mixture.
- Add the egg, vanilla extract, lemon zest, and lemon juice, and mix thoroughly.
- Add the flour, baking powder, and salt, mixing just until a smooth, soft dough forms.
- Cover the bowl and transfer the dough to the refrigerator for about half an hour to make it easier to work with.
- Form small balls from the dough and roll each ball generously in powdered sugar.
- Arrange the cookies on a baking sheet lined with parchment paper, leaving space between them.
- Bake in an oven preheated to 175 degrees Celsius (350°F) for 10-12 minutes. Remove when the cookies are still slightly soft in the center and let them cool and set.
